Pot Roast of Beef

Ingredients

  • 4 lbs. beef
  • ¼ lb. salt pork
  • 3 tablespoon butter
  • 2 bay leaves
  • 4 peppercorns
  • 1 jigger white wine or whiskey
  • Salt and pepper
  • 4 whole carrots
  • 1 sliced onion

Method

Cut salt pork into small pieces. Make incisions in meat and stuff with salt pork. Brown meat in melted butter. Add other ingredients, cover tightly and simmer very slowly for 4 hours. Make gravy from meat sauce and serve with meat.
