Beef Tongue

Ozór na Szaro

Ingredients

  • 4 or 5 lb. beef tongue
  • 2 bay leaves
  • 3 qts. water
  • 5 peppercorns
  • 1 onion
  • Salt to taste

Method

Boil tongue with other ingredients until tender, about 2 hours. Cool. Remove outside skin and roots. Slice thin. Save broth.

    Sauce

  • 3 teaspoon sugar
  • Small glass of wine
  • 1 teaspoon vinegar or
  • 2 teaspoon lemon juice
  • 3 teaspoon water
  • 1 tablespoon butter
  • ½ teaspoon lemon rind
  • 1 tablespoon flour
  • ½ cup raisins
  • 2 cups broth in which tongue was boiled
  • ½ cup chopped blanched almonds

Carmelize the sugar and water. Add butter, flour and broth and boil to the bubbling stage. Add remaining ingredients. Add sliced tongue and bring to a boil.
