Veal Roast

Ingredients

  • 4 or 5 lbs. veal rump or shoulder
  • ½ teaspoon thyme
  • ½ teaspoon sage
  • ¼ lb. salt pork
  • ¼ cup flour
  • Garlic
  • 3 tablespoon butter
  • ¼ teaspoon allspice
  • 1 onion
  • Dash of mace
  • Dash of cloves
  • 2 celery stalks
  • 1 parsnip
  • Salt and pepper
  • 4 carrots
  • 2 bay leaves
  • 1 cup boiling water

Method

Wipe meat with damp cloth. Make incisions in meat with sharp knife and fill with bits of garlic and diced salt pork. Sprinkle meat with the seven spices. Rub well with flour. Brown the bouquet vegetables in the butter. They should be diced fine. Brown veal in another pan and add to vegetables. Add the boiling water, cover tightly, and simmer about 3 hours.
