  • 4 to 5 lbs. pork loin
  • 1 teaspoon ground mustard
  • 1 ½ tabl

Method

Mix the ingredients and rub thoroughly into the loin. Roast at 325° uncovered from 4 to 5 hours, until tender.

A good crusty topping is made as follows:

  • 1 ½ cups apple sauce
