Ingredients

  • Turkey liver, chopped fine
  • 1 onion, minced
  • 6 tablespoon butter
  • 8 cups stale bread
  • Broth to moisten
  • 2 eggs
  • 1 cup celery, cut fine
  • ½ teaspoon thyme
  • ¼ teaspoon mace
  • Salt and pepper

Method

Fry onion in butter until it becomes transparent, not brown. Add chopped liver and celery and fry. Moisten bread slightly. Mix all the ingredients and stuff turkey. You may add almond halves or half cup of black raisins and teaspoon of sugar.
