Special Stuffing

Ingredients

  • Goose liver
  • ½ lb. calf liver
  • ½ lb. veal
  • ½ lb. lean pork
  • ½ lb. salt pork
  • 2 egg yolks
  • 6 slices dry white bread
  • ½ teaspoon thyme
  • Salt and pepper

Method

Run the first five ingredients through meat grinder twice. Slightly moisten the bread. Mix all ingredients well and stuff fowl.
