• 4 medium sized beets, cooked
• 1 tablespoon sugar
• ½ cup walnuts
• 1 tablespoon minced parsley
• Juice of ½ lemon
• 1 green onion, chopped
• ½ teaspoon salt

Slice beets very thin. Grind walnuts fine. Combine ingredients and toss lightly with a fork.
