Dill Pickles

Kwaszone Ogórki

Ingredients

  • ½ bushel firm cucumbers
  • 3 gallons ice water
  • 1 cup salt

For each quart

  • Sprig of dill
  • 1 slice onion
  • ½ bud garlic
  • 1 ring green pepper
  • 1 teaspoon horseradish
  • 1 ring red pepper (optional)
  • Pinch of alum

Method

Add salt to water. Wash cucumbers and soak in water over night. Drain, wipe dry. Pack into quart jars. Add rest of ingredients.

Cover with brine made as follows

  • 20 cups water
  • 2 cups vinegar
  • 1 cup salt

Boil the solution, skim and pour hot into the jars. Seal at once.
