Pickled Mushrooms

  • 1 peck mushrooms
  • 2 qts vinegar
  • Olive oil
  • ¼ cup salt
  • Small white onions
  • whole pepper, allspice and bay leaf


Wash mushrooms in cold water. Cook with vinegar and salt for 20 minutes. Let stand over night. Next day, drain, wipe dry and arrange in jars. Blanch and peel onions and put a few in each jar. Cook vinegar with whole pepper, allspice and bayleaf. Cool and cover mushrooms. Add 1 tablespoon of olive oil to each jar.
