Pickled Mushrooms with Vegetables

Ingredients

  • 1 peck mushrooms
  • 2 qts. water
  • ½ cup salt
  • ¼ cup salt

Method

Wash mushrooms, rinse in several waters. Soak overnight in gallon of water with ½ cup of salt. Drain and rinse. Cover mushrooms with 2 quarts of water and ¼ cup salt. Simmer 1 ½ hours. Drain and rinse in cold water.

    Vegetables

  • 8 carrots
  • 6 green tomatoes
  • Small bunch of celery
  • 1 cauliflower
  • 6 onions
  • 1 lb. wax beans
  • 1 green pepper
  • 2 sliced cucumbers

Cook carrots. Cook cauliflower and green pepper together. Cook wax beans. Cook celery and onions together. Do not overcook vegetables—they are firmer underdone.

Salt sparingly the green tomatoes, cucumber slices and sliced onion. Drain and rinse.

    Make syrup of

  • 4 cups white sugar
  • 2 qts. white vinegar
  • 2 cups brown sugar

Boil syrup for 4 minutes. Add to syrup ½ teaspoon whole mustard seed and 3 whole cloves for each quart of mushrooms and vegetables. Add mushrooms and boil for 10 minutes. Fill hot jars and seal.
