Cottage Cheese Filling

Ingredients

  • 1 lb. dry cottage cheese
  • 1 tablespoon lemon juice
  • 2 eggs, separated
  • 1 tablespoon lemon rind
  • ½ cup sugar
  • ½ teaspoon salt
  • 2 tablespoon butter
  • ½ teaspoon vanilla
  • 1 tablespoon flour

Method

Press cheese through sieve; add egg yolks, sugar, butter, flour, lemon juice and rind, salt and vanilla. Mix well. Beat egg whites stiff and fold in carefully.
