Cottage Cheese Cake

Ingredients

  • 2 cups flour
  • ½ teaspoon salt
  • ¼ lb. butter
  • Grated rind of 1 lemon
  • 6 tablespoon sugar
  • 3 tablespoon cream
  • 4 egg yolks

Method

Beat butter with sugar to a white mass. Add yolks beaten with salt, lemon rind and flour. Mix with hand thoroughly. Spread on baking pan to half-inch thickness and bake for 30 minutes at 350°.

While it is baking, prepare the following cheese topping:

  • 2 lbs. dry cottage cheese
  • 3 egg whites, beaten
  • ¼ lb. butter
  • 1 tablespoon flour
  • 8 egg yolks
  • ½ cup sugar
  • 2 tablespoon lemon juice or
  • Grated nutmeg
  • 1 teaspoon vanilla
  • 1 teaspoon vanilla
  • ½ teaspoon mace or
  • ½ teaspoon nutmeg
  • ½ cup butter
  • 4 ½ cups flour

Press cheese through sieve. Add butter, egg yolks and sugar. Beat thoroughly. Mix flour carefully and add flavoring. Fold in the beaten egg whites. Spread on cake, sprinkle top lightly with grated nutmeg. Return to oven for 30 minutes at 325°.
