The recipes provided to the St Andrew’s women by Cadbury included this very simple but tasty chocolate shortcake. I’ve made it more chocolatey than the original by adding extra cocoa powder, and updated it to use a pre-made pastry case so it can be whipped up in just a few minutes.

Ingredients

  • 2 tablespoons raspberry jam
  • 1 x shortcrust pastry flan case (approximately 18 cm in diameter)

Method

Preheat the oven to moderate (180°C).

Spread the jam thinly over the base of the pastry case.

Beat the caster sugar and egg together until thick and creamy and the sugar is dissolved. Sift in the flour and cocoa powder and beat until combined. Lastly, stir in the melted
