This soup recipe was donated to 600 Tested Recipes by a Mrs Atcherley. A hearty and healthy blend of legumes, leeks and tomatoes, it seems surprisingly modern because it uses olive oil. This now everyday ingredient was practically never found in Australian cookbooks at the time and usually had to be sourced in small bottles from a chemist. The original method also called for mashing the cooked ingredients, given there were no blenders
