If the copy of The Mitchell Valley Recipe Book held by the State Library of Victoria is any guide, just about every recipe in this collection is a winner. There were so many ticks of approval that it was hard to know where to start. But gingerbread has always been one of my favourite things, and this cake-like version, donated by L. Schmidt of Tambo Upper, is so delicious and quick to make that in the end there was really no choice.</
