The recipe published in Australian community cookbooks is a simple cake made using dates and walnuts, topped with a hot glaze made with brown sugar and cream. In Canadian versions the boiled icing has morphed into a ‘broiled’ topping, with the cake being returned to the oven once it is iced, and coconut replacing the walnuts.
