This is one of four sartee, or satay, recipes provided in the Buffalo Cook Book— adapted versions of a dish that came to the Territory with Asian immigrants. It is very different from what many of us know as satay, which is usually served with a rich peanut and coconut cream sauce. As the recipe book points out, no matter what you call it, it’s essentially grilled cubes of meat cooked on a stick! Most people will find it difficult to source the buffalo, so try it with beef instead.</
