Nookie was one of four women to donate this recipe to the cookbook, so it was clearly a district favourite. ‘We were asked to submit our favourite recipes, and they had to be tried,’ she says. ‘My mother made this before I was around. I don’t know where she got it—it was just one of those recipes that is cheap and easy to make, and we usually had a little bit of mashed potato left over.’
