This recipe for latkes was provided by Roma Kausman. I don’t recommend that you try to beat Henry’s record, but they make a delicious snack served in the traditional way, with apple sauce and sour cream.
Peel and grate the potatoes and onion (if using), then squeeze out any moisture.
Place the vegetables in a large bowl and stir in the eggs. Add the flour, salt, baking powder and pepper and stir until thoroughly combined.
Drop heaped dessertspoonfuls into a large, well-greased frying pan and cook over medium heat until golden brown on both sides.
