  • Parsley sprigs
  • Oil for deep frying

Method

Wash the parsley sprigs and dry well - it is important that the parsley is completely dry before frying.

Drop sprigs into very hot oil and cook for a few seconds until the parsley is crisp but still bright green. Drain on paper towels.
