This is, without doubt, one of my very favorite cocktails. The peaches must be fresh and ripe, otherwise they are best omitted - which still leaves a delicious cocktail.
Skin the peaches, remove the pits, and puree the flesh in a blender. Sieve to obtain the juice.
Put 2 tablespoons of peach juice and 2 tablespoons of peach schnapps in a tall glass and stir well. Fill the glass with sparkling wine, stir once again, and serve.
