Laver and Potato Cakes

  • 1 tin laver bread
  • a bunch of spring onions, finely chopped
  • 450 g/1 lb mashed potato
  • salt and freshly ground pepper

Method

Mix the spring onions with the potatoes and laver bread and season well with salt and pepper. Bind with the egg. Mould into small cakes.

In a heavy frying pan heat butter and oil together. You need to fry these cakes at quite a high temperature or they will fall apart. Fry until browned on both sides, then drain on paper towels and serve.
