This dish came about when I was trying to design an interesting menu for the launch of a German supermarket chain. They kept sending me food I didn’t want, including a box of bratwurst. The recipe has to have been a result of divine intervention because nothing good would have been inspired by my thoughts as I looked at these sausages.


  • 6 bratwurst
  • bacon fat
  • 225 g/8 oz strong blue chee


Fry the bratwurst in a little bacon fat (oil will do) until lightly coloured all over. Chop into 2.5 cm/1 in pieces, removing any loose skin. Roughly chop the cheese.
