This dish came about when I was trying to design an interesting menu for the launch of a German supermarket chain. They kept sending me food I didn’t want, including a box of bratwurst. The recipe has to have been a result of divine intervention because nothing good would have been inspired by my thoughts as I looked at these sausages.
Fry the bratwurst in a little bacon fat (oil will do) until lightly coloured all over. Chop into
Make a dressing with the oil, vinegar and mustard. You will need a strong, fairly dense dressing, so add a pinch of sugar if liked. Season with salt and pepper.
Mix the dressing with the bratwurst and cheese, cover and leave overnight before serving.
