Ingredients: 680 g (2¾ cups) ricotta cheese; 3 tbsp unsweetened cocoa powder; 140 g (1 cup) chopped dark chocolate (at least 60% cocoa); 140 g (1 cup) chopped dark chocolate (at least 60% cocoa); 175 ml (¾ cup) double cream; 450 g (1 lb) kataifi, cut crosswise into 2.5cm (1in) long pieces; 2 x lemon syrup (see below); 240 g (1 cup) labneh; 400 g (2 cups) sugar; 240 ml (1 cup) water; juice and grated zest of 2 lemons

Method

Filling

Place the ricotta and cocoa powder in the bowl of a stand mixer fitted with the paddle attachment and beat on medium speed until combined.
Melt the chocolate over a double boiler. Stream the chocolate into the ricotta-cocoa mixture with the mixer on low speed. Mix until incorporated. Refrigerate.
