Ingredients: 600 g (1 lb 5 oz) cream cheese; 300 g (1⅓ cups) sour cream or Greek yoghurt; 300 g (1⅓ cups) sour cream or Greek yoghurt; grated zest of 1 orange; 1 tsp vanilla extract; 5 medium eggs; 600 g (1 lb 5 oz) white chocolate, melted; 250 g (1⅓ cups) white chocolate chips; 1 kg (2 lb 3 oz) bananas, each cut into 4 pieces; 30 g (2 rounded tbsp) light brown sugar; 10 g (2 tsp) unsalted butter; 125 ml (½ cup) banana liqueur; 1 litre (4 cups + 3 tbsp) orange juice, freshly squeezed; 2 tsp vanilla paste; 200 g (¾ cup) tahini; ½ tsp baking powder; 200 g (1¾ sticks) butter; 80 g (¼ cup + 2 tbsp) sugar; 750 g (6 cups) plain flour

This cheesecake is very special to us as it was the first cheesecake we introduced when we opened Bala Baya and is still our favourite.

Method

Cheesecake filling

Beat the cheese, sour cream or Greek yoghurt, orange zest and vanilla in a mixer. Slowly add the eggs, while still beating, until combined. Fold the melted white chocolate into the mix followed by the chocolate chips. Place in the fridge until the crumble base is ready and cooled.
