This Southeast Asian–style cucumber salad is for heat seekers. Here, we build the depth of flavor with complex Chinese black vinegar and tamari, then add two chili sauces: sriracha and sambal oelek, its chunky Vietnamese cousin. Topped off with the powerful flavors of cilantro and peanuts, this is not just heat for heat’s sake. The cucumbers can be served as an appetizer or side dish.
