Sunchokes—also known as Jerusalem artichokes—are the root of the sunflower plant and one of the few original North American crops. The roots themselves look a bit like ginger but couldn’t taste more different. They have a delicate sunflower seed flavor that works well with Middle Eastern, Catalan, and North African flavors.
