Pho is a classic Vietnamese rice noodle soup. It’s based on a deeply aromatic, rich broth built with many levels of seasoning. It’s nearly impossible to find a vegetarian pho, since bones are used in the classic preparation—in fact, many chefs won’t consider a broth made without bones to be true pho. Not me.
