Pub food is rich and comforting, but it often needs some imagination to bring it up to modern dining tastes. This take on a classic concept calls for golden hedgehog mushrooms, which come into season just when the weather is starting to get really chilly. Substitute any mushrooms you want, though—even ordinary buttons will shine in this soup.
