Bourdetto, a baked fish stew from the island of Corfu, has many variations. At Vedge, we’ve offered versions with eggplant and oyster mushrooms, but my favorite is this hearty stew that features fresh chickpeas. If you think you like chickpeas, these will take your relationship to the next level. Light green and delicately flavored, fresh chickpeas appear for only a short time each year—if you can’t find them, substitute English peas. Try this with a glass of retsina—white win
