The famous Irish dish colcannon is traditionally made with cabbage or kale and mashed potatoes. I was dying to reinvent this classic, so I envisioned a healthy at-home version, tinted bright green by the addition of a last-minute chive emulsion. Of course, the temptation here is to also add more fat. But who needs it? Savoy cabbage is already a flavorful vegetable, and by roasting it, we coax out even more flavor. The result is delicious—but light enough for you to have an extra pint.
