I thought I had had a pierogi before. Then, a couple of months after we started dating, Kate made me these pockets of Polish perfection that brought tears to my eyes when I ate them. We have jazzed up this recipe a bit with some smoky charred onion, but the base recipe is true to Kate’s family’s original. Make sure to have some extra vegan sour cream on hand when serving.
