This savory tart featuring summer vegetables is dedicated to the amazing restaurant Xopana at the Choupana Hills Resort in the mountains of Madeira. Most of the restaurants on the island serve traditional Portuguese cuisine, but at Xopana the chef uses seasonal and local ingredients from around this lush, beautiful garden of an island. We just so happened to be there in late July, when zucchini, tomato, and basil were all over the menu.
