Royal trumpet mushrooms are one of my favorite ingredients. Big, meaty tubes of usable flesh, they are easy to work with and offer a pleasantly chewy texture. When cooked properly, royal trumpets can fit well into nearly any recipe that calls for mushrooms. Slice them thickly crosswise and you have “scallops” to sear in a pan.
