Royal trumpet mushrooms are one of my favorite ingredients. Big, meaty tubes of usable flesh, they are easy to work with and offer a pleasantly chewy texture. When cooked properly, royal trumpets can fit well into nearly any recipe that calls for mushrooms. Slice them thickly crosswise and you have “scallops” to sear in a pan. Roast them whole in the oven with herbs and olive oil and serve over mashed potatoes for a “meat and potatoes” fix. But my favorite preparation is slicing them into v
