Panna cotta, or cooked cream, is a traditional dessert from the Piedmont region of Italy. At Vedge we use agar in place of gelatin to help set this custard. And we create a caramel flavor by cooking the sugar first for the base layer of our custard. The rich creamy custard is an ideal canvas for serving any fresh fruit. In this case, the equal parts lemon and agave create a light syrup to help the berries shine, and the tarragon adds a hint of fresh herbal interest.
