The Chickpea Omelette batter allows us to make a plant-based version of the classic Mediterranean dish, potato and onion frittata. This adaptation won’t disappoint, thanks to its incredible flavours. Be generous with the black pepper for an even bolder taste.

Ingredients

  • 2 tbsp olive oil
  • 400 g (14 oz) potatoes, peeled and finely sliced<

Method

In a large frying pan (skillet) over a medium heat, heat half the olive oil. Add the potatoes and onions and season with salt and black pepper. Cook, stirring occasionally, for 15–20 minutes or until the potatoes are tender and slightly golden.

Add the cooked potatoes and onions to the chickpea omelette batter and mix well to evenly combine.
