Mushroom pizzaiola is a recipe that represents a dish from my childhood that my mother often cooked for dinner. It’s a very comforting dish, rich in flavour, easy to make and low cost, making it perfect for a quick dinner or as the main course of a delicious multi-course meal. Serve accompanied by crusty bread, if you like.

Ingredients

  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 onion, finely sliced

Method

In a large frying pan (skillet) over a medium heat, heat the olive oil. Add the garlic and onion and cook for 3–4 minutes or until the onion becomes translucent.

Add the mushrooms and cook for another 5–7 minutes, stirring occasionally, until the mushrooms soften slightly.

Add the can of chopped tomatoes, dried oregano and basil, and season with salt and freshly ground black pep
