Use almond ricotta as a dairy-free substitute in recipes calling for traditional ricotta, or spread it on crackers and bread, or use it as a dip. It adds a creamy, nutty flavour to various dishes, including as a filling for ravioli or on top of a lasagna.
In a food processor or high-powered blender, combine the almond flour, nutritional yeast, lemon juice, and a pinch of salt. Blitz together, gradually adding up to 500ml (17½fl oz/2 cups + 2 tbsp) water, until you achieve a smooth, ricotta-like consistency.
