This is arguably the most elegant dish in this cookbook, from its colour to its sophisticated flavours. It exemplifies how a humble ingredient, paired with a precious one, can be elevated. If you have leftovers, simply add some water and cook some small-sized pasta in it.
In a large saucepan, add the potatoes and bay leaves and cover with plenty of salted water. Bring to a boil over a high heat and cook for 20–25 minutes or until the potato starts to break apart when touched with a fork. Drain the potatoes and discard the bay leaves.
In the same pan over a medium heat, add 1 tablespoon extra-virgin olive oil and the leeks. Fry for 5 minutes until golden.
