Minestrone is an Italian classic dish and a real example of comfort food. I love to eat mine with toasted bread and a drizzle of fruity olive oil. Feel free to adjust the quantities of ingredients according to your taste preferences or dietary needs.

Ingredients

  • 2 tbsp olive oil
  • 200 g (7 oz) onions, finely chopped

Method

In a large saucepan over a medium heat, heat the olive oil. Add the onions, garlic and cherry tomatoes and cook for 5 minutes or until softened.

Add the carrots, celery, and potatoes and cook for another 5 minutes or until slightly softened.

Pour in the vegetable stock and chopped tomatoes and bring to a boil.

Add the courgettes, green beans, cabbage, butter beans, chick
