Pizzoccheri Valtellinesi is a traditional Italian dish from the Valtellina Valley in Lombardy. It’s a hearty pasta dish typically made with buckwheat pasta, potatoes, cabbage, and cheese. This is a great dish for the cold season, the combination of ingredients will bring you a warm hug of comfort.

Method

In a large bowl, mix the buckwheat flour and the xanthan gum. Gradually add 300ml (10½fl oz/1¼ cups) water, mixing until a firm dough forms.

Dust the worksurface with flour. Roll out the dough to a thickness of 3mm (⅛in) then cut the sheet into thin, short strips to make the pizzoccheri.

Bring a large saucepan of salted water to the boil. Add the potatoes and cook for 15 minutes
