Have a bowl of warm water nearby when you’re assembling these to prevent the rice sticking to your hands.
Wet your hands and put a little salt in the palm of your left hand. Grasp about ½ cup of rice and place it in the palm of the same hand. Make a small well in the centre, place your chosen filling in the well and cover with more rice. Gently but firmly shape into a pyramid, turning as you shape.
