This is a really fudgy, gooey, rich recipe that works well with the Roasted Carrot Dip. Malt extract contains lots of iron and vitamins.


  • 3 Tbsp malt extract (available online and in pharmacies)
  • Scant ½ cup [100 ml] light c


Preheat the oven to 375°F [190°C]. Grease and line a large 9-by-5-in [1-kg] loaf pan.

Warm the malt extract, light corn syrup, date syrup, and soy milk together in a large saucepan, then fold in the dates, flour, and salt.
