  • ¾ cup [125 g] dried chickpeas (garbanzo beans) + ½ Tbsp baking soda

Method

If using dried chickpeas (garbanzo beans), soak them overnight in plenty of cold water with the baking soda, then drain and rinse. Place in a large pan, cover with water, and add a pinch of salt and another pinch of baking soda (not too much, as you want the softening qualities without the soapy flavor). Cook for 2 hours or until soft, topping up the water if necessary to keep them covered. (If
