Dare I say it, but these are even lighter and more delicious than standard English crumpets. Slather with tahini, agave nectar, Marmite, or jam.

Ingredients

  • ½ cup [70 g] white bread flour
  • ½ cup + ½

Method

Mix together the flours, yeast, and salt in a bowl. Add the sugar and warm almond milk and beat together until you have a smooth batter. Cover and leave to rise in a warm place for 45 minutes.

Mix the baking soda into the water, then leave for a couple of minutes before adding it to the batter. Cover again and leave to rest for 20 minutes.
