This is a side for your sliders. I love sides; I could have a whole meal of sides. I have meat-eating mates who apologize to me when we go to restaurants because I can “only” have the sides from the menu. Typically meat-centric way of thinking. I’m happy with sides. Really, tapas are sides; small plates are sides. Long live sides.


  • 1 qt [1 L] vegetable oil, for deep-frying

Heat the oil in your deep-fat fryer to 375°F [190°C]. In a bowl, combine the flour and sparkling water without over-stirring; the odd lump is fine. Crush the cornflakes so that they resemble large bread crumbs, then mix with the paprika and salt. Dip each onion ring into the batter mixture, then into the cornflakes. Deep-fry in batches until golden and crispy.
