Heat the oil in your deep-fat fryer to 375°F [190°C]. In a bowl, combine the flour and sparkling water without over-stirring; the odd lump is fine. Crush the cornflakes so that they resemble large bread crumbs, then mix with the paprika and salt. Dip each onion ring into the batter mixture, then into the cornflakes. Deep-fry in batches until golden and crispy.
