This is an Indian “sundae” traditionally made with basil seeds, which expand and have a soft gelatinous texture with a nutty center, A falooda can alternatively be made with vermicelli, which is something most Westerners are not too keen on—it’s like rice pudding, but with pasta. So I’ve eliminated the vermicelli, Chia seeds are a healthy update, for chia lowers cholesterol and adds fiber to the diet.
