This creamy sweet potato soup is balanced so nicely by fresh sautéed mushrooms so that each bite is the perfect balance of savory and sweet. I love to serve this relaxing soup at any meal, but it looks quite fancy and stands on its own for any special occasion as well.
Place a small amount of oil along with onion in a soup pot over medium heat. When the onion begins to sizzle, add a pinch of salt and sauté until translucent, about 2 minutes. Sir in sweet potatoes, a pinch of salt and sauté until shiny with oil. Add water, cover and bring to a boil. Reduce heat to low and simmer until sweet potatoes are quite soft, about 25–30 minutes. Season with salt to tast
