This yummy dish is crazy delicious, super easy, and so comforting, you can’t help but slow down and simply enjoy it. It’s a skillet-to-table dish. Did I mention it’s super easy and yummy?
Place a small amount of olive oil in a skillet with red onion over medium heat. When the onion begins to sizzle, add a splash of soy sauce and sauté for 1–2 minutes. Stir in mushrooms, a splash of mirin and sauté until mushrooms are quite soft. Layer carrot, zucchini and cabbage on top with tofu cubes as the top layer. Add a small amount of water, cover and reduce heat to medium-low and simmer
