A classic Tuscan peasant dessert made with the best of the harvest. A bit of work, this delicious delicate focaccia-like pastry is a true symbol of autumn.
Stir together yeast, wine, rice syrup and warm water in a large bowl until the yeast is dissolved. Let stand about 10 minutes, until the yeast is bubbly.
